Potato and Chickpea Curry

Again, the photo somehow got trashed before I got a chance to use it. Sooo no picture. But I can say this curry is really good. I usually have a hard time making curry from scratch that I approve of, but this was tasty.

2-3 Tbs Canola oil
2 tsp Ground fennel
2 tsp Curry powder
2 tsp Turmeric
1 tsp Onion powder
1 tsp Garlic, minced
1/2 Onion, chopped
4 Large potatoes, chopped
25 oz can Chickpeas (with the liquid!)
14.5 oz can Diced tomatoes
12 oz Tomato paste
1/2 C Earth Balance

Boil potatoes in water until they are edible. Place oil in a large pot and heat. Add spices, garlic, and onion and fry until fragrant.

Add chickpeas, diced tomatoes, and tomato paste. When the potatoes are done, drain them and add them to the pot. Add Earth Balance and stir gently until it has completely melted.

Serve over rice.
