Though basically all I eat now are vegetables, I do make sure I have a green salad everyday. I get the pre-washed spring mix from Costco, chop up about half an English cucumber and half an avocado and then top it all of with the SunDrenchers Honey Mustard (vegan!) dressing. Then I toss it all in one of our smaller mixing bowls. So tasty. If my basil plant has some extra leaves, I will chop those up and mix them in too. I love the fresh basil and mustard flavors together.
