I love this pudding for breakfast with some cut fruit on top. You could also make it like a parfait with cut fruit in layers if you want to be fancy 🙂
1 C Chia seeds
2 C water
1 tsp Vanilla
1/2 C Fruit of your choice (I like mango)
Salt to taste
Agave to taste
Soak chia seeds in water for about 10 minutes. Blend all ingredients in a blender until smooth and thick.
Will stay good in the refrigerator for 3-4 days.
