Quinoa Salad with Roasted Sweet Potatoes, Kale, Dried Cranberries, and Red Onion

Just made this quinoa salad with roasted sweet potatoes, dried cranberries, kale, and red onion. A little time-consuming for a weekday meal, but tasty! I substituted a few things: used dinosaur kale instead of regular, and regular quinoa instead of black. Also, a little bit more  salt. And there’s no way it serves 6, more like 3. Maybe 6 as a side dish…
