Super Healthy Buckwheat Waffle Recipe with The Vegg

I’m still testing the Vegg and using it in all the ways, but I did want to post this AWESOME and super healthy buckwheat/spelt waffle recipe I came up with last week. These waffles are perfectly crispy on the outside and cakey on the inside. They are also sugar and oil free!

Of course, if you don’t have The Vegg you could use flax seeds or EnerG egg replacer… the original recipe calls for 2 eggs.

1 C Buckwheat flour
1 C Spelt flour
2 tsp Baking powder
1/2 tsp Salt
1/8 tsp Nutmeg
1 3/4 C Plain plant milk
2 Tbs Apple cider vinegar
1 tsp Vegg
1/4 C Water
3 Tbs Honey
2 Tbs Applesauce
Canola oil or cooking spray to grease the waffle iron

Combine buckwheat flour, wholewheat flour, baking powder, salt, and nutmeg in a bowl and whisk together.

In a blender, combine milk and apple cider vinegar. Let sit for a few minutes. This will create a sort of buttermilk taste. Add the Vegg, water, honey, and applesauce. Blend until smooth and until the Vegg is completely incorporated and there are no flakes left.

Grease waffle iron and heat. Add dry ingredients to wet ingredients and use a spatula to mix until just combined. Pour some of the mixture into heated waffle maker and cook however you normally cook waffles 🙂

Makes 4-5 waffles.
