Vegan Chocolate and Cinnamon Linzer Cookie Recipe

1/2 C Margarine
1/2 C Shortening
1/4 C Sugar
1/4 C Brown sugar
2 C Flour
2 tsp Cinnamon
1/8 tsp Salt
1/4 C Sugar
1-1/2 tsp Cinnamon
1/4 C Vegan chocolate hazelnut spread (we used Justin’s Chocolate Hazelnut Butter)
Linzer cookie cutters

In a medium bowl, mix together margarine, shortening, sugar, and brown sugar. Sift in flour, cinnamon, and salt, and mix well. Preheat oven to 350 degrees.

Roll dough to 1/8-inch thick. Using linzer cookie cutters, cut out an equal amount of base (whole shape) and top (cut-out shape) cookies. Transfer to cookie sheets and bake for 15-18 minutes. In a small bowl, combine sugar and cinnamon. After you remove the cookies from oven, sprinkle them with cinnamon sugar and set aside on wire racks to cool.Chocolate and cinnamon linzer cookies

After cookies have cooled completely, spread a generous layer of chocolate hazelnut spread on the base cookies. Then add the top cookies to create a cookie sandwich.
