Soft Vegan Gingerbread Men Recipe


These cookies are so yummy–soft and molassesey… mmm. They’re nothing like store-bought gingerbread since they’re spicy and not super sweet, but they’re delicious. Plus they’re lots of fun to decorate!

1 C Brown sugar, packed
1/3 C vegan Shortening
1 1/2 C Molasses
2/3 C cold Water
7 C Flour
2 Tsp Baking powder
2 Tsp Ginger
1 Tsp Allspice
1 Tsp Cinnamon
1 Tsp Cloves
1/2 Tsp Salt

3 C Powdered sugar
1/3 C Earth Balance
1 1/2 Tsp Vanilla
2 Tbs Plant milk

In a large bowl, mix brown sugar, molasses, shortening, and water with an electric mixer until completely blended. Mix in the remaining ingredients with the electric mixer and blend until combined. The dough should be pasty and sticky. Once it’s blended, cover it and put it the fridge for at least 2 hours.

When you’re ready to work on the cookies, heat the oven to 350 and spray a cookie sheet with baking spray.

Roll the dough to 1/4-inch thick on a floured surface. Use cookie cutters to cut out your cookies and place them on your cookie sheet. Make sure they are 2 inches apart since they will expand.

Bake the cookies 5-15 minutes, depending on how big your cookies are. The cookies will not visibly brown since they are already dark, but you can tell they are done when they start to get lighter and the tops look dry.

Immediately move the cookies to a wire rack to cool. Let them cool for at least an hour before decorating.

While you are waiting, you can make the frosting. Blend the powdered sugar, Earth Balance, vanilla and milk with an electric mixer until smooth and creamy. Add more powdered sugar or milk if it is too thin/thick.
