Sometimes I go on pantry-clearing binges. What this usually results in is me using strange pantry items to make meals. Case in point: bulgur wheat taco ‘meat.’ I had nearly a whole package of bulgur wheat and didn’t want to just make tabbouleh out of it (It’s really cold here, I need something warm!). SO I googled it and found out you can make taco ‘meat’ out of it! Exciting! I decided to make tacos one night and ended up making a HUGE batch, so used it to make taco soup the next night. It was delicious in both! It has a really nice texture and doesn’t fall apart like tofu or seitan can. I definitely recommend it if you feel like making something new, plus it’s really easy to make.
1 C Bulgur wheat
1 C Water
1 pkg Taco seasoning (about 6 Tbs)
Toast bulgur wheat over medium heat until it becomes fragrant and browned (about 5 minutes). Stir often and make sure it doesn’t burn.
While the bulgur wheat is toasting, boil the water and then whisk in the taco seasoning. Once the bulgur wheat is done, pour it into the boiling water. Cook the bulgur wheat over medium heat for 5-10 minutes, stirring occasionally. Taste at 5 minutes to see if it is done. You can tell when it is done when it isn’t crunchy or overly chewy. It should be soft and easy to chew. If you need to add more water to keep it from burning, do so. But just make sure it all evaporates before it’s finished. Taste and adjust seasonings as necessary (depending on your taco mix, you may need to adjust it to your taste).
You can use the bulgur wheat ‘meat’ in tacos, taco soup, or whatever else taco ‘meat’ is good in. Enjoy!
